Clarie Kelley's Beef Stroganoff
Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.
- 3 to 4 lbs roast, chuck, sirloin, etc., cubed
- 1/2 large burmuda onion, chopped
- 1 can tomato soup
- 1 can Campbell's beef broth
- Splash of red wine, such as burgundy (Never cook with something you wouldn't drink!)
- Salt and pepper to taste
- 2 tblsp. flour
- 1/2 pt sour cream (at room temperature)
- 1 pkg. egg Noodles
- 1 or 2 pats butter
- Brown the onion and remove from pan.
- Brown the meat in the onion pan.
- Add onion, tomato soup (undiluted), wine, beef broth, salt and pepper.
- Cover and simmer 3 hours (or use your crock pot, or put in oven for 3 hrs at 250 degrees).
- Thicken over stove with flour.
- Cook and drain noodles.
- Fry noodles in butter in a skillet.
- Put noodles on a platter.
- Top with beef and sauce.
- Top with sour cream.
