Farm Journal's Brown Stew

Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) put me onto the Farm Journal's "Best Ever Recipes" book. He sent me a couple recipes. Here is the information on how to find the book on the web.

Farm Journal's Best-Ever Recipes, by Elise W Manning Publisher: Philadelphia : Countryside Press ; Garden City, N.Y. : distributed to the trade by Doubleday, Copyright 1977. ISBN: 0385129661 : 9780385129664 OCLC: 2917780

This one sounds like a good crock pot recipe!

  1. Brown beef cubes on all sides in hot oil in 4qt dutch oven.
  2. Add garlic and saute 1 minute.
  3. Add salt, pepper, Worcestershire sauce, lemon juice, bay leaf and 2 c. water.
  4. Bring to a boil, then reduce heat.
  5. Cover and simmer for 2 hours, stirring occasionally.
  6. Remove bay leaf.
  7. Add potatoes, carrots, celery and 2 c. water.
  8. Continue cooking 30 minutes or until vegetables are tender.
  9. Add lima beans and peas.
  10. Combine flour and 1/2 c. water, and blend well.
  11. Stir flour/water mixture into stew.
  12. Cook a minute or so to thicken.

Makes 8 servings.
