Clarie Kelley's Pinwheel Cookies

Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box. My mother, Clarie (Bauer) Kelley, made these frequently. They were great fun to eat, as you could nibble your way around and around toward the middle.

  1. Sit together flour, baking powder and salt.
  2. Cream shortening and sugar.
  3. Add yolk and vanilla.
  4. Add sifted dry ingredients.
  5. Divide dough in half.
  6. Add chocolate to one half.
  7. Roll each half between two sheets of waxed paper until about 1/8-inch thick.
  8. place dark strip of dough on light strip.
  9. Roll as if jelly-roll with light dough to outside of roll.
  10. Wrap in waxed paper and chill overnight.
  11. Slice cookies 1/8-inch thick on cookie sheet.
  12. Bake at 375 degrees for 8-10 minutes.
  13. Immediately remove cookies from cookie sheet to towel to cool.

This recipe is EASILY doubled.

This dough freezes well.
