Farm Journal's Porcupine Meatballs

Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) put me onto the Farm Journal's "Best Ever Recipes" book. He sent me a couple recipes. Here is the information on how to find the book on the web.

Gary Larson of "Farside" fame, did a cartoon entitled "Punk Porcupines." He later said a reader had asked why the cartoon was not labeled "Punkupines." He and I both agree, it should have been entitled "Punkupines."

  1. Combine ground beef, rice, milk, onion, (garlic,) salt and pepper in a bowl.
  2. Mix lightly, but well.
  3. Drop rounded tablespoonfuls of mixture into 13x9x2-inch baking pan.
  4. (Bear would add many small onions into the baking pan.)
  5. Combine soup and water in a bowl.
  6. Mix well (but lightly?)
  7. Pour soup over meatballs.
  8. Cover pan tightly with aluminum foil.
  9. Bake in 350 degree oven for 1 hour or until hot and bubbly.

Makes 6 to 8 servings.
