Mexican Beef Casserole

Bear's Anecdote - A friend of mine from Huntsville, Alabama (Tim P. - It isn't good to give full names on the internet.) gave me a great stack of recipes. Here is one of them.

  1. Brown ground beef with onion and garlic. Drain.
  2. Stir in salt, cumin, tomatoes (with liquid), tomato sauce and chilies.
  3. Heat to boiling.
  4. Reduce heat and cook uncovered for 15 minutes.
  5. Heat oven to 400 degrees.
  6. Grease 3 qt casserole dish.
  7. Mix baking mix, corn meal, milk, sugar, shortening and egg until moistened. (Batter will be lumpy!)
  8. Spread into casserole.
  9. Spoon beef mixture over batter.
  10. Sprinkle with cheese.
  11. Bake uncovered until cheese is melted and golden brown, about 25 minutes.
  12. Garnish with red and green chili peppers if desired.

Makes 6 servings.
