Chili Con Cornbread
Bear's Anecdote - Years ago, Bear's mother sent Jodie and Bear a box of recipes. Here is one from the box.
- 2 (15 oz) cans chili or 4 cups homemade chili
- 1 pkg. cornbread mix
- 2/3 c. milk
- 1 egg beaten
- 1 c. (4 oz) shredded SHARP cheddar cheese
- Preheat oven to 400 degrees.
- Pour chili into greased 8-inch square baking dish.
- Combine remaining ingredients in order listed.
- Blend well.
- Pour batter over chili.
- Bake 30 to 35 minutes or until done.
- Cool 5 minutes.
Makes 4 to 6 servings.
